While mayonnaise is typically more mild-mannered, this delectable oven-baked chicken sandwich is made even more flavorful with our zesty Chipotle Lime Mayo. Crafted with avocado oil and cage-free certified organic eggs, this delicious spread delivers a kick of organic chipotle powder and chipotle extract that wakes up your palate.
Covered in gooey cheddar cheese and crisp bacon, our Chipotle Chicken Sandwich recipe is more like a club sandwich than your basic grilled chicken breast. It’s best served warm, though you can also eat leftovers cold; just make up a batch, place the components in a bento-style box to be assembled later, and refrigerate. We also opted for slices of low-carb bread, but you can swap for a bun or your favorite bread to customize it to the individual tastes in your household. Make a mouthwatering meal in just over 20 minutes with this easy Chicken Chipotle Sandwich recipe. This flavorful club-style sandwich topped with melted cheese and crisp bacon gets its zing from Chipotle Lime Mayo made with real ingredients like avocado oil and cage-free organic eggs. Serve with chips, veggie sticks, or potato salad for a filling family meal.

Ingredients
- 1 pound boneless skinless chicken breasts, sliced horizontally in half

1 Tablespoon Primal Kitchen Avocado Oil
- 1 teaspoon chipotle powder
- ½ teaspoon black pepper
- ¼ teaspoon salt
4 ounces cheddar cheese, sliced or shredded

3 Tablespoons Primal Kitchen Chipotle Lime Mayo
1 large avocado, sliced
- 1 tomato, thinly sliced
- 1 small red onion, thinly sliced
- 4 lettuce leaves
- 4 slices thin cut bacon
- 8 slices of low-carb bread, lightly toasted
Directions
Preheat your oven to 375°F.
- Place your bacon on a sheet pan or baking dish and bake until they reach your desired crispiness.
While the bacon is cooking, combine the avocado oil, chipotle powder, pepper, and salt in a bowl. Toss the sliced chicken breasts in the mixture.
- Lay the cutlets out on a sheet pan and roast for about 20 minutes. Place cheese on top of each piece of chicken and place back in the oven until the cheese is melted and the chicken has an internal temperature of 165°F.
Spread a small amount of mayo on each slice of bread. Build your sandwich with a slice of toast on the bottom (mayo facing up), followed by a leaf of lettuce, 2 slices of bacon, chicken breast, tomato slices, avocado slices, onion slices and then another piece of toast on top.
Secure the sandwich with a couple of toothpicks and carefully slice into two halves. Serve alongside your favorite chip or side dish.
