Squash is often the forlorn veggie in the produce aisle, pushed aside in favor of rock star greens like Brussels sprouts or broccoli. Roll some zucchini strips in breadcrumbs and fry them up, on the other hand, and you have a stunning appetizer or side dish that takes center stage on the plate.
Our easy air fryer zucchini fries are a quick alternative to fast carbs like potatoes. We swapped the deep fryer for the more parent-approved air fryer (our go-to appliance these days) and coated our zucchini fries in gluten-free panko so everyone can feel good putting them on their plate. While the squash doesn’t have a ton of flavor on its own, our Chipotle Lime Mayo gives these gluten-free fried zucchini sticks a boost of smoky, kicky flavor.
