Strawberry Chicken Salad

With its light, creamy texture and the addition of fresh fruit, chicken salad with strawberries is perfect for those warm summer days when the mere thought of standing in front of a hot stove makes you sweat. Trust us, we've been there. And since you can now get these plump and juicy berries year-round in most places, this salad is also easily enjoyed whenever you're craving a light and refreshing lunch.
Our version of chicken and strawberry salad is made with just nine real-food ingredients and 10 minutes of meal prep (if you're using pre-cooked chicken). While strawberries add vibrant color and flavor, the real showstopper here is a two-ingredient dressing made with our rich, creamy Mayo with Avocado Oil and punctuated with a mellow vinegar burst from Dijon Mustard. Whether devoured on a bed of refreshing mixed greens, between gluten-free bread slices, or in front of an open fridge while you cool off from the beating sun, this salad offers a delicious respite for your taste buds.

This refreshing, summery salad is made with fresh strawberries and coated in a homestyle dressing crafted with our delicious Mayo and Dijon Mustard. The perfect picnic treat, it can also be served atop gluten-free bread or tucked inside a lettuce cup—no matter how you eat it, it's a satisfying lunch or snack.
Ingredients
1 1/2 pounds (about 5 cups) grilled chicken breast or thighs, cooked and shredded
- 1 pint strawberries, washed, hulled, and sliced
1 avocado, cubed
1/2 red onion, sliced
- 2 stalks celery, diced
- 1/2 cup sliced almonds, toasted

1/2 tablespoon Primal Kitchen Dijon Mustard
10 cups baby spinach or mixed lettuces
Directions
Place the first six ingredients into a large mixing bowl.
Add mayo and mustard. Mix all of the ingredients together gently until well combined.
Serve a large scoop on top of 2 cups of fresh greens (we used a mixture of baby spinach and mixed lettuces). Enjoy!

- Use an avocado that's still firm to the touch. A very ripe avocado will be too mushy for this recipe.
- In a pinch, you can substitute canned chicken or shred a store-bought rotisserie chicken.
