Buffalo Chicken Pickle Poppers

Perfect mashups happen when you bring two popular foods together in lip-smacking symmetry. Think taco burgers, nacho pie, or the infamous cruffin (aka croissant muffin). While we’ve created recipes for some slightly unusual pairings before—pickle sushi, we’re looking at you—this delicious mashup of jalapeño popper and Buffalo chicken is one we’ve been longing for all along. In fact, you could say it’s a really big dill.
Imagine the briny, zesty flavor and crisp snap of a delicious dill pickle loaded with your favorite Buffalo chicken dip and bubbling with gooey cheese. Yeah, that’s a combo destined for success. Inspired by the cheeseburger pickle popper trend, we teamed up with Van Holten’s pickles and brought in creamy, classic Primal Kitchen Mayo with Avocado Oil to tame the cayenne kick of chicken smothered in our medium-heat Buffalo Sauce. This easy appetizer is perfect for tailgate parties, nighttime snacking, or a lower-carb lunch.
Buffalo Chicken Stuffed Pickles

Jalapeño popper meets Buffalo chicken dip in this tasty appetizer mashup that went viral on social. We used Van Holten’s Big Papa pickles to create our stuffed pickles, so they’re more like pickle boats, but you can also opt for smaller dills.
Pro Tip: Turn up the heat by substituting our fiery Hot Buffalo Sauce or cool things down to kid-friendly level with Mild & Sweet Buffalo!
Ingredients
3 large dill pickles, sliced in half (we used VanHolten’s)
1/3 cup cream cheese
2/3 cup cooked shredded chicken

2 tablespoons Primal Kitchen Mayo
-
2 tablespoons Primal Kitchen Original Buffalo Sauce
3 tablespoons shredded cheese
1/3 cup bacon crumbles
Directions
Preheat your oven to 380°F (195°C).
Slice the pickles in half lengthwise and scoop out the seeds.
In a bowl, add the cream cheese, chicken, mayo, buffalo sauce, and half of the shredded cheese. Fold gently until combined.
Spoon an equal amount of the mixture into each pickle half.
Bake at 380°F (195°C) for about 5 minutes, or until the mixture starts to brown.
Remove from the oven. Top pickle halves with remaining cheese and bacon crumbles.
Return to the oven for an additional 1-2 minutes, or until the cheese is melted and the bacon is crispy. Serve and enjoy!
