Classic Greek Salad

Also called a horiatiki salad, the humble Greek salad is a staple of classic Mediterranean cuisine. The basics are, well, fairly basic: Take cucumbers, tomatoes, onions, olives, and feta and toss them together with a combination of herbs and oil. From there, the traditional Greek salad has endless possibilities. Some versions are topped with chicken or lamb, while others add capers or peperoncini.
Our easy twist on this delicious dish is jazzed up with Primal Kitchen Greek Vinaigrette Dressing (naturally!), a tangy blend of two types of vinegar plus avocado oil for good fats. This no-seed-oil dressing & marinade gets its zesty flavor from an herbaceous mix of thyme, marjoram, garlic, and a double pop of oregano. We kept this Greek salad recipe simple with traditional ingredients and added green pepper for a fresh, grassy flavor and crisp crunch that gives it extra zing.

Our classic Greek salad recipe gives beachy Mediterranean vibes with a fresh, vibrant blend of romaine, cucumber, tomato, and feta amped up with an herbaceous Greek dressing made with avocado oil. Serve it as a side dish with your favorite protein or add prepared chicken, salmon, or chickpeas to make this traditional Greek salad a full meal!
Ingredients
5 cups romaine lettuce, chopped
1 cup cucumber, cut into half-moon slices
1 medium bell pepper, chopped
1 medium red onion, thinly sliced

1/3 cup Primal Kitchen Greek Dressing
1 cup cherry tomatoes, halved
4 ounces feta cheese, crumbled into chunks
salt and pepper, to taste
Directions
Place the lettuce, cucumber, bell pepper, and red onion in a large bowl.
Add the Greek dressing and toss together.
Fold in the tomatoes and feta cheese.
Season with salt and pepper. Serve with additional dressing, if desired, and enjoy!
