Ingredients
- 1 box gluten-free spiral pasta
- 1 cup broccoli florets
1/3 red onion, sliced
- 1 cup cucumbers, chopped

1 cup grape or cherry tomatoes, halved
Directions
Cook pasta according to package directions, Drain, rinse, and set aside to cool.
- Blanch the broccoli by placing it in a pot of boiling water for 2 minutes, then transferring it to an ice bath. Drain and pat dry.
In a large mixing bowl, combine cooled pasta with chopped cucumbers and ranch dressing. Mix thoroughly.
Gently fold in broccoli, red onion slices, and tomatoes. Chill for 30 minutes to an hour before serving, then enjoy.
