June 01, 2017
Looking to up your appetizer game with a keto-friendly snack? These stuffed jalapeño peppers pack a lot of flavor and a little bit of heat. While they'll work with most ground meats, we added Whole30-Approved, sugar-free, spicy chorizo to for protein and fresh peppers for the ideal low-carb delivery method. Sautéing your veggies and meat in Primal Kitchen Avocado Oil will add a little extra richness and flavor. The result is a kicky plate of bite-sized stuffed peppers that will make your game day watch party (or any party!) a hit.

2 Tablespoons Primal Kitchen Avocado Oil
1 cup pepper jack cheese or mozzarella cheese, grated
Directions
Set oven to 400ºF.
In a sauté pan, add Primal Kitchen Avocado Oil, onions, and garlic. Sauté for 4-5 minutes on medium heat until onions turn translucent.
Add chorizo to pan and brown with onion and garlic mixture.
Cut jalapeños in half and fill with browned spicy chorizo, onions, and garlic.
Line a baking sheet with parchment paper. Place stuffed jalapeños on baking sheet. Top each jalapeño with a sprinkle of cheese. Bake stuffed jalapeños until soft, about 20 minutes. Enjoy!
