Keto Buffalo Chicken Wings

April 15, 2019

Possibly one of the hardest things about “going keto” can be keeping things interesting in the kitchen. When you’re preparing your own Keto-compliant foods at home, it can be easy to fall into a rut.

It’s true that Big Ass Salads topped with avocado oil- or olive oil-based dressings, and main dishes of tender roast meats or grill-kissed proteins and veggies can get tiresome if you tend to stick to the same things each week: steak and broccoli on Mondays, chicken thighs and Brussels sprouts on Tuesdays, salmon kale Caesar salad on Wednesdays, and so on week after week.

If you don’t want to stretch too far out of the meal planning and prep that’s been working for you, why not try a new Keto-compliant sauce or dressing? Instead of a kale Caesar salad, add some chopped radicchio and cabbage to your kale and top with Primal Kitchen Green Goddess Dressing. These little swaps or additions can do wonders for keeping things spicy.

And speaking of spicy, you might get cravings once in a while. If you used to meet your buddies at sports bars to watch games, drink beer and eat wings, or if you tended to head to happy hour with your co-workers at the end of a long week, or you used to help organize a mini tailgate at your kids’ games and miss the finger foods, don’t fret. Our Keto Buffalo Wings are every bit as crispy-skinned, tender-on-the-inside, spicy and sexed-up as the most crave-worthy wings out there. We used an AirFryer to get the right texture (no deep-fried bath in cheap seed oils here!), and whipped up a finger-licking-good hot sauce made with our Primal Kitchen Spicy Ketchup to coat the wings.

This keto, Primal/paleo, Whole30 sauce can also be used as a sauce to coat the AirFryer chicken wings and drumsticks. Follow the recipe above, but substitute the teriyaki sauce for this spicy wing sauce, and leave off the green onion and toasted sesame seed garnishes.

Ingredients

  • 1⅓ cups hot sauce, such as Frank’s Red Hot
  • 1 cup unsalted butter
  • 3 tablespoons white vinegar
  • 2 tablespoons Primal Kitchen Spicy Ketchup
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper

Instructions

  • Whisk all ingredients together in a saucepan.
  • Place saucepan over a burner set to medium.
  • Bring to a simmer, while stirring occasionally with a whisk. When the sauce starts to bubble on both sides of the pan, remove from heat and turn off.
  • Once the wings are done, put them in the large bowl and pour enough spicy wing sauce on top to coat.
  • Toss wings around to get them fully covered. Keep tossing in the sauce until it all sticks to the wings.
  • Add more sauce for an extra thick coat, if you'd like.
  • Store any unused sauce in an airtight container in the refrigerator for one week.
