Leftover Turkey Sandwich

Turn your leftovers into a delicious lunch with this fresh and easy turkey sandwich recipe. Extra roasted turkey is piled high with stuffing and sweet potato mash, plus our creamy Avocado Oil Mayo delectably flavored with leftover cranberry sauce.
Ingredients
4 slices of rustic Italian bread (or bread of choice)

¼ cup Primal Kitchen Mayo
¼ cup cranberry sauce
1 cup fresh spinach leaves, washed and dried
2-4 thick slices leftover roasted turkey
¼ cup leftover stuffing, optionally warmed
¼ cup mashed sweet potatoes, optionally warmed (see Recipe Notes)
Directions
Lay out the slices of Italian bread on a clean work surface. In a small bowl, stir together the mayo and cranberry sauce. Spread about 1 Tbsp cranberry mayo onto the bread slices, reserving 2 Tbsp for Step 4.
Layer spinach leaves on two of the bread slices.
- Add sliced roasted turkey on top of the spinach.
- Spread another layer of cranberry mayo on top of the turkey slices.
- Add stuffing.
Spread a layer of sweet potato mash on top.
- Cap each sandwich with the remaining slices of bread, mayo side down. Serve and enjoy!

Tip: If you don’t have leftover sweet potato casserole filling, boil quartered sweet potatoes for 9-12 minutes, drain, and mash with a little butter or plain Greek yogurt.

Everybody loves a Thanksgiving dinner with all the trimmings: roasted turkey, savory stuffing, creamy sweet potatoes topped with marshmallows and lightly toasted until golden. We’re practically salivating, just writing about it. What you likely don't enjoy is having the same exact meal for three days straight while everyone in your household struggles to finish all the inevitable leftovers. Before the bird hits the oven, you’re probably already imagining the cries of “Aw, Mom, not turkey again” destined to come.
This sandwich is our favorite fix for leftover fatigue. Made with succulent turkey piled high with layers of crispy stuffing, cranberry mayo, and sweet potato mash, it’s a tasty fall twist on a turkey club that will have everyone (yes, even picky teens!) asking for more.
