Leftover Turkey Sandwich

Everybody loves a Thanksgiving dinner with all the trimmings: roasted turkey, savory stuffing, creamy sweet potatoes topped with marshmallows and lightly toasted until golden. We’re practically salivating, just writing about it. What you likely don't enjoy is having the same exact meal for three days straight while everyone in your household struggles to finish all the inevitable leftovers. Before the bird hits the oven, you’re probably already imagining the cries of “Aw, Mom, not turkey again” destined to come.
This sandwich is our favorite fix for leftover fatigue. Made with succulent turkey piled high with layers of crispy stuffing, spinach, and sweet potato mash, it’s a tasty fall twist on a turkey club that will have everyone (yes, even picky teens!) asking for more.
Leftover Turkey Sandwich

Turn your leftovers into a delicious lunch with this fresh and easy turkey sandwich recipe. Extra roasted turkey is piled high with stuffing and sweet potato mash, with layers of a homemade cranberry spread adding sweet, creamy flavor.
Ingredients
- 4 thick slices of rustic Italian bread (or bread of choice)
- 2-3 thick slices of leftover roasted turkey
- 1 cup of spinach leaves, washed and dried
¼ cup of stuffing
¼ cup of mashed sweet potatoes

4 Tbsp Primal Kitchen Mayo
4 Tbsp leftover cranberry sauce
For the cranberry spread:
Directions
Lay out the slices of Italian bread on a clean work surface.
Mix Primal Kitchen mayo and cranberry sauce together until smooth and well combined. Spread ¼ of mixture onto one side of each bread slice.
Layer spinach leaves on top of the cranberry mayo mixture on two of the bread slices.
- Add sliced roasted turkey on top of the spinach.
- Spread another layer of cranberry mayo on top of the turkey slices.
- Add stuffing.
- Spread a layer of sweet potato mash on top. (Tip: If you don’t have leftover sweet potato casserole filling, boil quartered sweet potatoes for 9-12 minutes, drain, and mash with a little butter or plain Greek yogurt.)
- Cap each sandwich with the remaining slices of bread, mayo side down. Serve and enjoy!
Recipe Note
- Nutritional information calculated using Cronometer.
- Don't have leftover cranberry sauce? Make your own by boiling 1 cup orange juice together with 1 cup cranberries and 2 Tbsp. honey. Reduce heat to medium and let it simmer for about 8 minutes, stirring occasionally, until the cranberries begin to burst and the mixture looks like a thin jam. Let cool.
