Chipotle Lime Chicken Salad Lettuce Wraps

For sweltering summer days or times when you're not eager to stand over the stove stirring and prepping, we love the simplicity of this amazing Chipotle Lime Chicken Salad. Tucked into lettuce cups, it's a fresh and easy weeknight meal or quick lunch that's just filling enough to be satisfying without making you feel overly full.
The smoky spice of the chicken complements the coolness of the salad perfectly, and the celery adds texture and a fun crunch! Plus, you can eat it right away or chill it for later (our preferred method), making it a delightful dish for weekly meal prep. Just pack each salad portion into a container or bento box and tuck a few extra-crisp lettuce leaves wrapped in plastic wrap, then assemble each chicken salad cup right before you eat. You can also serve it over mixed farmers' market greens for an easy salad.

Dressed in a combination of our creamy Chipotle Lime Mayo mixed with Greek yogurt, this simple chicken salad is ideal for meal prep or an easy weekday dinner. Serve it in individual lettuce leaves or over spring mix!

Ingredients
Directions
Preheat the oven to 350°F. Place the chicken breasts on a baking sheet. Sprinkle with salt and pepper.
Bake at 350°F for 40-50 minutes or until chicken reaches an internal temperature of 165°F.
Once the chicken is out of the oven, chop the meat into cubes and set aside to cool.
Add the chicken, Primal Kitchen® Chipotle Lime Mayo, yogurt, chipotle seasoning, lime, celery, and a sprinkle of salt into a mixing bowl. Toss well.
Serve in lettuce cups or over mixed greens. Enjoy!
