Baked Cauliflower Mac and Cheese

Cutting grains and dairy from your diet doesn't mean you have to give up warm comfort foods of childhood. When it comes to versatile veggies, cauliflower reigns supreme and can act as a replacement for rice, pasta, meat and so much more. Fried, grilled, roasted or baked, cauliflower meals are easy to make, and showcases the flavor of your favorite sauces.
Skip the bacon in this recipe to make it plant-based, vegetarian, and vegan friendly.
Baked Cauliflower Mac and Cheese with Bacon

Ingredients
1 large head of cauliflower

Primal Kitchen Avocado Oil Spray
-
1 jar Primal Kitchen No Dairy Cheddar Cheez Style Sauce
2/3 cup Gluten Free Panko Style Coating

1 and ½ Tablespoons Primal Kitchen Avocado Oil
6 strips bacon (or desired amount, optional)
1 Tablespoon Chives, chopped (optional)
Directions
Preheat oven to 375 Farenheit
If you are using the bacon, line the strips on a grated cooking sheet and bake for 15 minutes or until desired crispiness.
Break apart or chop one head of cauliflower into florets. Bring a pot of water to a boil and add the cauliflower pieces. Return to a boil and gently boil for 3 to 5 minutes.When parboiled to desired doneness, remove the cauliflower with a slotted spoon and place in ice water to stop the cooking.
Spray a 7x10 or similar size baking dish with Spray Avocado Oil to coat the bottom and sides of the dish. Add cauliflower and No Dairy Cheddar Cheez Style Sauce. Mix until cauliflower is evenly coated.
Pour panko style coating and avocado oil in a bowl, mix well. Add panko mixture to the top of the cauliflower, dispersing evenly.
Place cauliflower in oven and bake until bubbly and golden, about 15 to 20 minutes. Then broil 2 minutes, or until the top is slightly browned.
While cauliflower is baking, finely chop bacon and chives if desired. Once the cauliflower is done baking, top with both ingredients and enjoy.
