Maple Pecan Collagen Bars

Crisp air, hayrides, and leaves bursting into autumnal colors are great, but there’s one thing we crave more than anything each fall: pumpkin pie spices. Contrary to popular belief, those pumpkin spice lattes in coffee shops don’t typically have any actual pumpkin in them. Instead, that warm and cozy flavor comes from a pumpkin pie spice blend teeming with cinnamon, nutmeg, and a hint of clove.
The beloved spice mix is the base of these delicious fall-inspired collagen bars made with real maple syrup (another seasonal flavor fave) and Primal Kitchen Vanilla Coconut Collagen. Our no-bake collagen bar recipe is a satisfying way to get your daily skin, hair, and nail support—plus 16 grams of protein per serving!—without all the added corn syrup or refined sugar of a typical protein bar. Plus, you can enjoy them year-round, rather than waiting for fall to announce itself in those cooler days and yellow-orange leaves!

Shake up your usual collagen smoothie routine with delicious collagen bars perfect for a sweet morning bite or afternoon snack. Made with maple syrup, pumpkin pie spices, and vanilla collagen powder, these easy no-cook bars deliver pumpkin pie bar flavor with the added benefit of supporting skin, hair, and nails.

Directions
In a bowl, combine the sunflower butter and maple syrup. Add the collagen, ground pecans, pumpkin pie spice, and salt. Stir to combine. (The dough should be thick.) Add an additional scoop of collagen, if needed.
Line an 8”x4” pan with parchment paper and add the dough to the pan. Use a spatula to flatten the mixture out.
Refrigerate uncovered for 3-4 hours.
Melt the white chocolate or coconut butter and drizzle it all over the collagen bar mixture. Refrigerate for an additional hour.
Cut into 6-8 squares or rectangular bars and enjoy. Store in the fridge and eat within 2-3 days.
Recipe Note

- Recipe time does not include estimated refrigeration time (4-5 hours).
- The total amount of collagen needed will vary slightly depending on the type of sunflower butter and maple syrup you use. We used organic SunButter with no salt, sugar, or added oils.
- After chilling, the bars should be slightly soft but still able to be picked up. If the bars are too soft, let them sit in the refrigerator uncovered for a few more hours before eating.
