Cut the zucchinis into cubes and place them in a food processor. Pulse until you have small, rice-sized pieces.
Place the zucchini rice in a bowl. Add cranberries, pine nuts, and Primal Kitchen Honey Mustard Vinaigrette.
Toss lightly to coat. Add goat cheese and chopped cilantro, if desired. Sprinkle with salt and pepper, to taste. Enjoy!
