Easy Keto Coleslaw

Our take on classic BBQ coleslaw substitutes monk fruit (or your favorite keto sweetener) for the sugars and uses Primal Kitchen Mayo as a binder. Made with avocado oil and Certified Humane, cage-free eggs, our original Mayo gives this coleslaw a classic picnic salad flavor without any corn syrup or cane sugar. Crisp, crunchy, and completely refreshing, this coleslaw contrasts the richness of real mayonnaise with the sweet tang of apple cider vinegar. Bring it to your next potluck, try it as an easy weeknight dinner side, or serve it with burgers and dogs at a summer cookout.

Ingredients
- 4 cups coleslaw mix

1/3 cup of Primal Kitchen Mayo
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. natural sweetener (such as powdered monkfruit)
- 1 Tbsp. celery seed
- Salt and pepper, to taste
Directions
Place coleslaw mix in a large bowl.
- Combine all ingredients except slaw mix in a smaller bowl and mix thoroughly with a spatula or hand mixer.
- Spoon mayo mixture into the larger bowl with the coleslaw mix and toss thoroughly until the slaw is evenly coated. Serve and enjoy!
