Grilled Corn Ribs

If you're not familiar with corn ribs, this recipe is a summer BBQ game-changer. Grilled up fresh, dusted with seasoning, and cut into curvy slabs that mimic the look of meat ribs, they add a "wow" factor to any picnic or potluck. Seriously, the first time we saw these kernels of joy at a restaurant, our eyes instantly widened.
An alternative to basic butter, Primal Kitchen Squeeze Chipotle Lime Mayo adds a smoky, savory flavor with a pop of bright citrus that elevates any meal. Corn ribs can be eaten just like regular meat ribs, and are arguably just as messy—but that's half the fun. Hold the corn rib on either end with the kernels facing towards you, then dive right in. No utensils necessary!

Corn on the cob that you can eat like ribs? Count us in. Inspired by a viral TikTok trend, this easy grilled corn ribs recipe is a crowd-pleaser at any summer gathering. In wintertime, you can skip the grill and boil the corn on the stove, then season and serve with a drizzle of zesty chipotle lime mayo for an extra punch of flavor.
Ingredients
2 ears of corn

8 Tbsp Primal Kitchen Avocado Oil
2 tsp lemon pepper seasoning
1 tsp garlic powder
1 tsp chili powder
1/2 tsp cayenne
1/2 tsp paprika
1/2 tsp black pepper
1/2 tsp salt
1 Tbsp cilantro, chopped
1/4 cup cotija cheese

Directions
Cut off ends of the ear and cut in quarters from end to end (cut in half longways, then cut each half again).
In a small bowl, combine avocado oil and spices.
Brush the oil mix onto the corn ribs.
Grill at 400°F for 30 minutes.
Top with cilantro and cotija cheese, to taste.
Squeeze Chipotle Lime Mayo on top of each rib. Serve and enjoy!
