Made with creamy, earthy butternut squash cooked in Primal Kitchen Avocado Oil, this warm and comforting soup is a fall favorite.

Ingredients
1 medium butternut squash (3-4 cups cubed)
2 sprigs of fresh thyme

2 Tbsp. Primal Kitchen Avocado Oil
1 medium onion, diced
⅛ tsp. ground turmeric
⅛ tsp. ground cumin
- 2 cups organic vegetable broth
Red chili flakes, to taste (optional)
Directions
Cut off the ends of the butternut squash and peel away the skin. Cut the peeled squash in half vertically. Scoop out and discard the seeds, then slice and cube the body and neck of the butternut squash.
Separate the stems and leaves of the thyme. Discard the stems and finely chop the leaves.
Heat the avocado oil in a large saucepan over medium heat. Add the onions and sauté about 5 minutes, stirring frequently, until soft. Stir in the thyme, reserving a pinch for garnish, and sauté 1 minute more.
Add the cubed butternut squash, turmeric, cumin, and broth. Turn heat to medium high and bring to a boil, then reduce to a simmer. Cover and cook until squash is fork tender, about 20-25 minutes.
Carefully transfer the mixture to a food processor and purée until smooth, working in batches. Do not overfill the blender! Alternately, use an immersion blender to purée the soup in the pan.
Ladle the soup into a bowl. Finish with a sprinkle of red chili flakes and fresh thyme on top. Enjoy!
