Sometimes you have the energy to whip up an Instagram-worthy lunch from scratch. Other days, a pre-cooked rotisserie chicken is your culinary BFF. Ready in just 10 minutes—or less, if you’re preserving every precious minute of your lunch hour—this delicious wrap is super simple yet packed with flavor. It starts with a base of shredded chicken combined with basic seasonings and aromatics.
We used rotisserie chicken to save time, but you can also use any leftover chicken or make your own by searing chicken breasts and then shredding them after they are fully cooked. The kicker in this recipe is creamy, fiery Primal Kitchen Buffalo Sauce teamed with crisp celery ribs and pungent, tangy blue cheese for a dynamic flavor similar to game-day wings. With the addition of earthy avocado, fresh tomatoes, and a drizzle of our dreamy Ranch Dressing, this wrap takes lunchtime snacking into the stratosphere.

This easy wrap features pre-cooked chicken tossed with creamy Primal Kitchen Buffalo Sauce, crisp veggies, and blue cheese. Ready in just 10 minutes, it’s a perfect quick snack or work-from-home lunch. If you’re feeling extra saucy, tuck a small bowl of extra Buffalo or Ranch on the side for some dipping and dunking action.
Ingredients
- ⅔ cup shredded rotisserie chicken

2-3 tablespoons Primal Kitchen Original Buffalo Sauce
- 2 scallions, thinly sliced
- 1 rib celery, finely chopped
- 2-3 ounces crumbled blue cheese
- 1 medium tomato, chopped
½ cup shredded lettuce
- ½ avocado, thinly sliced
- 2 large burrito wraps
- Salt and pepper, to taste

Primal Kitchen Ranch Dressing, to taste (optional)
Drizzle of honey, to taste (optional)
Directions
In a bowl, combine the shredded chicken, buffalo sauce, scallions and celery. Season with salt and pepper to taste, or add a drizzle of honey if you’d like.
Warm your tortilla in the microwave between two damp pieces of paper towel for about 20-30 seconds, or until soft and pliable. Spread half of your chicken mixture along the midline of the tortilla and line up half of the blue cheese, tomato, lettuce and avocado slices. Add a drizzle of blue cheese or ranch dressing, if desired.
- Bring the bottom of the wrap up over the filling and tuck it into the filling slightly as you bring the left and right sides of the wrap over the filling. Roll tightly until the filling is all wrapped up, then turn the wrap over so it stands flap side down.
Repeat with the second wrap. Eat whole or slice the wrap in half. Serve with more Buffalo sauce or ranch on the side.
