Ingredients
- 1 package organicgirl baby greens + crunch
- 1-2 sweet potatoes, cubed and cooked
- 1/2 red onion
- 1 large Honeycrisp apple
- Pecans
- Toothpicks
- Primal Kitchen Ranch Dressing, for dipping
Directions
Cut sweet potatoes into small cubes. Boil in a pot of water for 30-50 minutes until tender.
- Cut red onion and apple into thin, 1x1” cubes. Cut greens into small, similarly shaped pieces.
- Carefully stack greens, sweet potato cube, red onion, apple, and 1 pecan onto a toothpick. Repeat the process until all toothpicks are filled.
Plate autumn salad bites and serve with a ramekin of Primal Kitchen Ranch Dressing, for dipping. Enjoy!
