We love a giant bowl brimming to the top with root vegetables, flavorful nuts, and the bountiful lettuces of the season, lightly drizzled with your favorite mouthwatering dressing. But what if you just want a quick snack?
We partnered with our friends at organicgirl to create a fun, easy-to-make handheld treat that captures the essence of a seasonal salad in one delicious bite. Starting with crunchy, organic, triple washed salad greens, simply thread the ingredients onto a toothpick for the perfect autumn appetizer or midday snack. While we paired these delectable autumn salad bites with our creamy, no-dairy Ranch Dressing made with avocado oil and Certified Humane® cage-free eggs, you can also substitute our Poppyseed Dressing for a tangier, onion-infused vinaigrette flavor or sweeten each bite with our Honey Mustard Dressing crafted without cane sugar or corn syrup.

Stacked with crisp organicgirl greens, apple, sweet potato, pecan, and onion on a toothpick, these easy appetizers are made for dipping in creamy Primal Kitchen Ranch Dressing. Time-saving tip: Skip the boiling and simply microwave pre-cubed, frozen sweet potatoes for a deliciously easy shortcut.
Ingredients
- 1 package organicgirl baby greens + crunch
- 1-2 sweet potatoes, cubed and cooked
- 1/2 red onion
- 1 large Honeycrisp apple
- Pecans
- Toothpicks

Primal Kitchen Ranch Dressing, for dipping
Directions
Cut sweet potatoes into small cubes. Boil in a pot of water for 30-50 minutes until tender.
- Cut red onion and apple into thin, 1x1” cubes. Cut greens into small, similarly shaped pieces.
- Carefully stack greens, sweet potato cube, red onion, apple, and 1 pecan onto a toothpick. Repeat the process until all toothpicks are filled.
Plate autumn salad bites and serve with a ramekin of Primal Kitchen Ranch Dressing, for dipping. Enjoy!
