Pulled Pork BBQ Sandwich

Nothing says summer like biting into a juicy, messy pulled pork sandwich. Primal Kitchen BBQ Sauce gives it an extra zing, and Primal Kitchen Squeeze Mayo makes the slaw extra creamy.
If you're not a pork fan, you can swap it out for jackfruit or chicken. We included directions for those alternatives down below.

Ingredients
-
1 bottle of Primal Kitchen Classic BBQ Sauce
Juice from 1 Orange
1 boneless pork shoulder (3 lb.)
-
1/4 cup Primal Kitchen Squeeze Mayo
1 cup shredded organic green cabbage
1 cup shredded organic red cabbage
1/4 cup red onion, sliced thin
24 slices of pickles
12 Unbuns (plant-based buns)

Coleslaw
Other
Directions
Pour barbecue sauce and orange juice over meat in slow cooker; cover with lid.
Cook on LOW 8 to 10 hours (or on HIGH 4 to 6 hours).
Remove meat from slow cooker; cut into small pieces or shred with fork. Return to slow cooker; stir to evenly coat meat with sauce.
Combine all coleslaw ingredients in a large bowl until cabbage is evenly coated with mayo
Assemble a sandwich with 4oz of meat, 1/4 cup of coleslaw and 2 slices of pickles
Recipe Note
If you'd rather cook your pork shoulder in a pressure cooker, cook on high for 1 hour and let the pressure naturally release for 15 minutes.
For extra creaminess, squirt a little extra mayo on your top bun.

Instant Pot BBQ Chicken Sandwich Recipe
- 1 lb Chicken breast in Instant Pot
- 1/4 bottle of Primal Kitchen BBQ sauce to marinate
- Pressure cook 8 minutes
- Use fork to shred chicken
- Serve on buns with coleslaw and pickles
BBQ Jackfruit Sandwich Recipe
- 3 cups of frozen jackfruit (1-inch chunks) in a large saucepan
- Add 1-1/4 cups of Primal Kitchen BBQ Sauce
- Cook over medium-low heat for 15 minutes or until heated through, stirring occasionally
- Use two forks to break any large pieces of jackfruit into smaller pieces to resemble shredded pork.
- Serve on buns with coleslaw and pickles (recipe serves 8)

A hardy sandwich calls for 4oz of meat per person. 1 pound of meat is equal to 16 ounces, so you'll need 2 pounds of meat to serve 8 people.
