Poppyseed Chicken Skillet

Winner winner, poppyseed chicken dinner! Some nights, you have time to leisurely cut up veggies and simmer sauces on the stove. Other nights, you’re scrambling to get something on the table in the precious minutes between work, shuttling the kids to practice, and pretzeling yourself into the lotus position at hot yoga class. One of our favorite chicken skillet recipes, this easy one-pan meal is our go-to for busy nights when scratch cooking is off the table.
Made by pouring our savory Poppyseed Dressing & Marinade into a hot skillet with pre-cooked chicken and broccoli, then following up with a decadent drizzle of hot melted butter, it's so delish the whole family will be begging for seconds (even your pickiest little one)! Our no-dairy dressing is also gluten-free and made without cane sugar, high fructose corn syrup, or artificial sweeteners, so everyone can enjoy a heaping helping of this crowd-pleasing dish.

Combine pre-cooked chicken breasts with fresh broccoli, melted butter, and our Poppyseed Dressing & Marinade for an easy weeknight meal you can toss together in minutes. Made with real ingredients like avocado oil and apple cider vinegar, this new dressing is deliciously savory, a touch sweet, and perfect for salads, skewers, and one-pot meals.

Ingredients
- 3 chicken breasts, cooked and cubed
- 2 cups fresh broccoli florets

1 bottle Primal Kitchen Poppyseed Dressing
17 grain-free crackers, crushed (we used Simple Mills)
1 stick melted butter
Directions
Preheat your oven to 375°F.
- Cut chicken breasts into ½-inch cubes. Place in a cool oven-proof skillet or baking dish.
- Add broccoli florets. Pour the full bottle of poppyseed dressing into the skillet.
- Crush grain-free crackers and sprinkle over the top of the chicken and veggie mixture.
- Melt butter in the microwave and pour over the skillet mixture.
- Bake at 375°F for 15-20 minutes until broccoli is cooked and crackers are browned. Serve and enjoy!
