Peanut Butter Chocolate Chip Protein Cookies

Turn over that colorful mass-marketed protein cookie package, however, and you’ll probably find a laundry list of sugars and unpronounceable ingredients. That’s why we decided to whip up an easy to follow protein cookie recipe that won’t derail your clean eating plans.
We combined the rich flavors of creamy peanut butter and decadent chocolate chips with the added benefits of Primal Fuel® Vanilla Coconut Whey Protein Drink Mix for a perfect post-workout boost or guilt-free dessert. Our delicious protein powder replaces the flour, with maple syrup and coconut sugar providing the perfect touch of sweetness. Whip up a batch of protein cookies with your favorite chocolate chips, salty-sweet peanut butter, and delicious vanilla whey protein powder instead of flour. Ready in under 20 minutes, they offer a perfect balance of indulgence and smart eating ideal for any time of day. Directions
In a large bowl, combine the peanut butter, egg, maple syrup and vanilla extract.
- Fold in the protein powder, coconut sugar, baking soda and salt until smooth.
- Fold in the chocolate chips. Let the dough rest at room temperature for 5 minutes.
- Use a cookie scoop to scoop the dough out into 6 cookies on a parchment covered sheet pan.
- Place the pan in the oven and bake for 6 minutes.
- Remove the pan from the oven and tap it on the countertop 2 or 3 times to help deflate the cookies. Repeat this again at the 10-minute mark.
- Bake for 12-14 minutes total, tapping the pan one last time as the cookies come out of the oven. They should be firm on top and slightly golden on the edges and bottom.
- Gently press additional chocolate chips on top and a sprinkle of coarse sea salt, then allow them to cool slightly before moving them to a cooling rack. Enjoy!
