Creamy Broccoli Salad

We took a classic broccoli salad recipe and paired it with our Creamy Romano Dressing made with grass-fed dairy for a creamy, crunchy, flavorful, and fresh side dish. We like to give the broccoli a quick steam to make it a bit more tender, but if you like the crunch of raw broccoli, feel free to omit that step!

Ingredients
4 strips bacon
10 ounces fresh (not frozen) broccoli florets, cut in half if large
8 cherry tomatoes, halved
½ small red onion, finely diced
3 Tbsp pepitas or sunflower seeds

¾ cup Primal Kitchen Creamy Romano Dressing, divided
Salt and pepper to taste (optional)
Directions
Cook bacon until crisp. Set aside.
(Optional) Place a steamer basket in a large pot with ½ -1 inch of water. Bring to a boil. Place the broccoli in the steamer basket, partially cover with lid leaving room for steam to escape, and steam for 2 minutes. Immediately drain broccoli in a colander and run under cold water to stop cooking. Shake off excess water, then pat broccoli dry with a clean kitchen towel.
Place the broccoli, cherry tomatoes, diced onion, and pepitas in a large bowl. Crumble 3 strips of bacon and add to bowl. Pour ½ cup of Creamy Romano Dressing over the ingredients and stir well to combine. If you prefer a creamier salad, add remaining dressing and stir again.
Taste and adjust salt and pepper to personal preference. Transfer to a serving bowl. Crumble the remaining piece of bacon and sprinkle over top. Serve and enjoy!
