Ingredients
2 lbs. boneless chicken thighs (or breasts)
-
1 Tablespoon Primal Kitchen Olive Oil
-
1/2 cup Primal Kitchen Hawaiian Style BBQ Sauce, plus 1/4 cup for glazing
- 1 clove garlic, peeled and diced
- 1 teaspoon ginger
- 1 teaspoon smoked paprika
- 1 red onion, sliced
- Fresh pineapple slices, quartered
-
Primal Kitchen Avocado Oil Spray
Directions
To make the marinade, combine ginger, garlic, paprika, and olive oil in a blender. Add ½ cup of Primal Kitchen Hawaiian BBQ sauce and blend until smooth.
- Place the chicken in a shallow bowl or baking dish and pour the marinade over the top until well-coated. Cover and refrigerate for a minimum of 30 minutes (or overnight).
- Once the chicken has marinated, spray a light coating of Primal Kitchen Avocado Oil on your grill grates to prevent sticking and preheat your grill to high-heat (about 500°F).
- Prep the pineapple by slicing it in half, coring it with a knife, and cutting it into triangular wedges (quarters)
- Pour ¼ cup of Hawaiian BBQ sauce into a small dish.
- Once the grill is hot, use tongs to place the chicken, onion slices, and pineapple onto the grate. The pineapple and onion should be cooked for about 2-3 minutes per side before being removed from the grill, but the chicken will need longer.
- Cook the chicken for about 5-6 minutes. Flip the chicken and use a basting brush to coat the chicken with Hawaiian BBQ Sauce. Cook for another 5-6 minutes or until the internal temperature reaches 165°F. Remove from grill and let cool, then serve and enjoy!
