Grilled Balsamic Steak Bites

Cutting your steak into "nuggets" means more surface area for the marinade to penetrate and for searing on a hot grill. Plus you can eat them with your hands. Win-win! We dip ours in uber-flavorful Roasted Garlic Dipping Sauce with good fats from avocado oil.

Ingredients
1 lb sirloin steak
½ tsp salt
½ tsp ground black pepper

1½ cups Primal Kitchen Balsamic Vinaigrette

Primal Kitchen Roasted Garlic Dipping Sauce for serving
Metal or wooden skewers

Directions
Pat sirloin dry and cut into cubes approximately 1½ inches square. Season with salt and pepper.
Place cubed steak in a glass bowl and cover with balsamic vinaigrette. Toss to coat, then let sit for 30 minutes. (Do not exceed 45 minutes—the acid will start breaking down the surface texture and you'll lose clean sear definition.)
Remove steak from marinade and allow excess marinade to drip off. Optionally thread steak bites onto skewers, leaving a small amount of space in between the pieces.
Heat your grill over high heat. Once hot, turn heat down to medium-high and place meat on hot grates. Cook 2-3 minutes on the first side, then rotate. Continue in this manner so that each side of the steak bites gets seared.
Once steak reaches desired doneness, remove from heat. (Internal temp should be about 145°F for medium.) Let rest on a plate for a few minutes, then serve with ramekins of Roasted Garlic Dipping Sauce. Enjoy!

Cook them over open flame to get delicious charred bits, then serve with Roasted Garlic Dipping Sauce, or some Organic Unsweetened Ketchup for the kiddos (or the adults—we don't judge anyone's dipping preferences!)
If you're feeling fancy, skewer these steak bites with chunks of onion and bell pepper, maybe even some pineapple, before grilling.
