1/4 cup Primal Kitchen Mayo

1 tablespoon Primal Kitchen Spicy Brown Mustard
- 1/2 avocado
- 6 hard-boiled eggs, peeled and chopped
- Salt & pepper, to taste
Directions
In a small bowl, mix and mash together the mayonnaise, mustard, and half an avocado until the ingredients are well combined.
Place the chopped hard-boiled eggs in a larger bowl. Add the mayo and avocado dressing, and mix gently until evenly coated.
- Cover the salad and chill it in the refrigerator for about 30 minutes to let the flavors meld together.
- Once chilled, serve your egg salad on a bed of lettuce. Garnish with crackers, pickles, and tomatoes.
