Ingredients
- 2 large English cucumbers
- ½ small red onion, diced or thinly sliced
- 1-2 garlic cloves, minced
- 3 Tablespoons chopped fresh dill
- 1 teaspoon lemon juice
- ¼ teaspoon freshly ground black pepper

Directions
Cut the cucumbers into slices a little less than ¼-inch thick.
- Place the cucumber slices in a large jar or mixing bowl. Add the rest of the ingredients. Shake or stir to combine.
Serve immediately for the crispest cucumbers, or allow to marinate in the refrigerator for several hours—up to overnight—to allow flavors to meld. (See Recipe Note.)
Recipe Note
If you're not eating this immediately, you can optionally remove some of the moisture from the cucumbers before tossing in the dressing. After slicing, lay the slices out on a clean kitchen towel and sprinkle lightly with salt. Cover with a second towel and allow to rest for 30 minutes. Pat dry, then toss with the other ingredients.
