Ingredients

1 Tbsp. (15 ml) Primal Kitchen Avocado Oil
1 onion, finely chopped
1 red or green bell pepper, finely chopped
2 garlic cloves, chopped
1 pound (450 g) ground beef
1 Tbsp.(15 ml) chili powder
1 tsp. (5 ml) ground cumin
1 tsp. (5 ml) ground coriander
½ tsp. (2.5 ml) dried oregano
1 tsp. salt
1 28-ounce (794 g) can of diced or crushed tomatoes
1 cup (240 ml) of water or beef stock
4 medium sweet potatoes, peeled or unpeeled, cut into 1/2-inch wide wedges, 2 to 3 inches long (13 mm x 5-7 cm)
2 Tbsp. (30 ml) Primal Kitchen Avocado Oil
Salt
½ cup (120 ml) shredded cheddar cheese

Heat the oil in a heavy pot or Dutch oven over medium-high heat.
Add onions and bell pepper. Sauté until onions are soft and translucent, about 8 minutes. Add garlic and cook, stirring, 1 minute more.
Crumble beef into the vegetables. Mix all dried spices and salt in a bowl, then sprinkle the mixture over the meat. Stir everything together.
Sauté until the meat is browned, breaking up the meat as it cooks.
Mix in crushed tomatoes and water/broth. Bring to a low simmer, cover partially, and simmer for one hour. Meanwhile, prepare the sweet potato fries.
Sweet Potato Fries
Preheat oven to 500° F (260° C).
Use a steamer or a steaming tray over a pot of boiling water to steam the potato wedges. Steam for 10 minutes, or until the sweet potato is just tender enough to pierce with a fork. If the potatoes become too soft, they’ll fall apart.
Gently remove the potatoes and pat them dry with a clean kitchen towel or paper towel.
Transfer the potatoes to a parchment-lined baking sheet. Drizzle with avocado oil and gently toss. Spread the fries out evenly in a single layer without touching.
Bake for about 15 minutes, turning once halfway through, or until the potatoes are nicely browned.
Remove the fries from the oven and season with salt.
Assemble
Pile the sweet potato fries on a platter or four individual serving plates.
Spoon the chili over the fries.
Sprinkle with cheese and drizzle with Special Sauce. Optionally garnish with green onions and cilantro. Serve warm. Enjoy!
