Ingredients
-
1 cup Primal Kitchen Buffalo Sauce
2/3 cup white vinegar
6 extra large or 8 large hard-boiled eggs
-
½ cup Primal Kitchen Mayo
2 tsp yellow mustard
½ cup sweet gherkin pickle juice
Salt and pepper, to taste
Paprika
Fresh dill sprigs
Carrot, julienned or cut into ribbons
OPTIONAL GARNISHES
Directions
In a glass container with a lid, mix the buffalo sauce and white vinegar.
Peel the hard-boiled eggs and slice in half lengthwise. Scoop out the yolks, taking care not to tear the whites. Place the yolks in an airtight container and place in the fridge to use later.
Add the hard-boiled egg whites to the buffalo sauce mixture. Gently spoon the mixture to over the whites to coat. Cover and place in the fridge for 2 days, occasionally turning the egg whites to coat.
When you are ready to assemble, remove the egg whites from the buffalo sauce mixture, rinse them gently under running water to remove excess marinade, and place them cut-side down on a wire rack to dry. Meanwhile, make the filling.
Place the egg yolks in a medium bowl and use a fork to mash them well. Mix in the mayo and mustard until fully incorporated. Add half the gherkin juice and stir to combine. Continue to add gherkin juice a tablespoon at a time until the mixture reaches desired consistency. Taste and adjust salt and pepper as needed.
Pat the egg whites dry with a clean towel if needed. Spoon the yolk mixture into the wells of the egg whites, or transfer the yolk mixture to a piping bag and pipe it into the egg whites.
Arrange the eggs on a serving plate. Optionally sprinkle with paprika and garnish with dill and/or carrot. Keep refrigerated until ready to serve. Enjoy!
