Just pour, marinate, and bake! Made with Primal Kitchen Avocado Lime Sauce & Dressing, this easy chicken dish has just a handful of purposeful ingredients. Perfect for a quick weeknight dinner or Sunday meal prep.

Ingredients

• 4 organic chicken breasts

• 3 cups riced cauliflower

• Primal Kitchen Avocado Oil Spray

• Salt and pepper, to taste

• ½ cup Primal Kitchen Avocado Lime Sauce & Dressing

• Organic cilantro, for garnish

Directions

1. Grease a 13x9 casserole dish with avocado oil spray.

2. Season organic chicken breasts with salt and pepper.

3. Pour ½ cup of Avocado Lime Sauce & Dressing over the chicken, until well coated. Marinate in the refrigerator for at least 30 minutes.

4. Preheat your oven to 400°F.

5. Bake chicken for 25 minutes.

6. Remove chicken from the dish and set aside. Add riced cauliflower to the dish and toss it in the dressing/chicken juices.

7. Place chicken on top of the cauliflower rice layer and cook for an additional 10 minutes (or until chicken reaches 165°F).

8. Sprinkle with fresh cilantro and serve.
