Juicy watermelon and cool cucumber come together in this 5-ingredient watermelon feta salad tossed in avocado oil balsamic dressing. These flavors simply scream summer.
Ingredients
1 personal-sized watermelon
- 1 cucumber
- 8 oz. block feta cheese

4 tablespoons Primal Kitchen Balsamic Vinaigrette (or more to taste)
- 2 sprigs fresh mint
Directions
Cut the watermelon in half. Carefully scoop out the fruit, trying to keep it as intact as possible. Place the rinds cut side up in bowls large enough to keep them upright.
- Cut the fruit into bite-sized pieces and divide it between the two halves of the rind.
Slice or dice the cucumber into bite-sized pieces and add to the watermelon bowls.
- Cut the feta into cubes. Add it to the watermelon and cucumbers.
- Remove the mint leaves from the stems. Discard the stems and roughly chop the leaves. Add the chopped leaves to the salad.
- Drizzle with Primal Kitchen Balsamic Dressing. Gently toss everything together. Enjoy!
