Creamy and full of flavor, cowboy caviar is a dip, appetizer, side dish, and even a main course all in one bowl. This is the easiest cowboy caviar recipe ever—and the most garlicky—thanks to Primal Kitchen's Roasted Garlic Dipping Sauce, which acts as the dressing. It's ideal for making ahead and eating throughout the week. See the Recipe Notes for variations.

Ingredients
4 Roma tomatoes, seeded and diced
1 green bell pepper, diced
1 red, yellow, or orange bell pepper, diced
2 cups frozen corn (thawed if eating immediately)
1 can black beans or black eyed peas, drained and rinsed
1 jalapeño pepper, seeded and diced
½ cup chopped fresh cilantro leaves
Juice of 2 limes
1 tsp cumin
1 tsp paprika

½ bottle Primal Kitchen Roasted Garlic Dipping Sauce
1 avocado, diced
Salt and pepper, to taste
Grain-free tortilla chips
1-2 limes, cut into wedges

Directions
In a large bowl, combine the diced tomatoes, both bell peppers, corn, beans, jalapeño, lime juice, cumin, and paprika. Give everything a good stir.
Add the Roasted Garlic Dipping Sauce and stir well to combine. If you will be eating this on the day you prepare it, stir in the avocado. Otherwise, add the avocado shortly before you’re ready to eat.
Taste and adjust salt and pepper as needed. Optionally serve with tortilla chips and lime wedges to squeeze over everything.
Recipe Note
Customize the recipe by using a combo of black-eyed peas and black beans. You can also add red onions, use canned and drained tomatoes, and/or use fresh corn instead of frozen. Cowboy caviar is so easy and versatile, it's almost impossible to mess up.
Cowboy caviar will keep in the fridge for 4-5 days, or you can freeze leftovers to eat later. Just know that freezing and thawing will make the ingredients mushier (but still delicious).

- Eat with tortilla chips (we like grain-free chips like Siete).
- Chop up rotisserie chicken and mix it in. Dig in with a fork, or wrap in a tortilla with or without rice.
- Serve alongside grilled steak, shrimp, salmon, or carnitas.
Cowboy caviar actually gets more delicious as it sits in the fridge and the flavors meld together, so go ahead and make it ahead of when you plan to eat it. Just keep it in an airtight container in the fridge and eat within 4-5 days. You can even freeze it to enjoy later! (Pro tip: If you're not planning on enjoying your cowboy caviar the same day you make it, wait until just before eating to add the avocado. Refrigerating and freezing avocado is perfectly safe, but you'll get the best texture and appearance if you hold off.)
