Ingredients
- 2 lbs baby potatoes, scrubbed

- 3/4 tsp garlic, minced
- 2 green onions, diced
- 6 slices cooked bacon, crumbled
Directions
Preheat your air fryer to 400°F.
- Spritz potatoes with Air Fryer Oil. Add potatoes to the air fryer basket in a single layer (cook multiple batches as needed).
- Air fry each batch for 18-20 minutes, turning halfway. Transfer cooked potatoes to a cutting board and use the back of a glass to gently smash them down. Set aside to cool.
- Cut the cucumber in half and use a spoon or melon baller to scoop out the seeds. Dice into small pieces.
- Add Ranch Dressing, mayo, and mustard to a medium-size bowl and whisk to combine. Mix in chopped cucumber and minced garlic. Add salt and pepper to taste.
- Gently fold the cooled potatoes into the salad until they are completely coated. Garnish with green onions and bacon crumbles. Chill and serve!
