Directions
Slice halloumi into pieces ½-¾ inches thick.
Place halloumi in a bowl and cover with hot (not boiling) water. Let sit for 15-20 minutes. Drain and pat dry. [See Recipe Note]
Heat a grill pan over medium-high heat. Once hot, spray both sides of halloumi slices with avocado oil. Place on hot grill pan and grill 2-3 minutes per side.
Remove and let cool a minute before serving with Tzatziki or your preferred dipping sauce. Grilled halloumi can also be enjoyed at room temp.
Recipe Note
Pro tip: The soaking step is optional, but it helps improve the texture of the final product. If you're in a hurry, you can skip this step. The grilled halloumi will still be delicious, just a bit chewier.

If you've never had grilled halloumi, you're in for a treat. You might expect grilled cheese to be gooey and runny, but halloumi cheese remains firm enough to provide a toothsome bite. Served warm or at room temperature, it's a perfect morsel to enjoy as a finger food, on top of a salad, or layered on focaccia with your fave vegetables for a meatless sandwich (4 ounces of halloumi contains more than 20 grams of protein!)
