Greek Chicken Nachos with Tzatziki

What happens when you cross a Greek chicken wrap with your favorite loaded pub fries? These Greek chicken "nachos" smothered in Primal Kitchen Tzatziki Dressing made with grass-fed dairy and good fats from avocado oil. They are equally perfect for game day or girl dinner!

Ingredients
14 oz. no-seed-oil frozen potatoes (see Recipe Notes)
2 cups cooked chicken breast, cubed or shredded

1 cup Primal Kitchen Tzatziki Style Dressing, divided
3 roma tomatoes, seeded and diced
1 medium cucumber, optionally peeled, diced
½ cup sliced pickled onions
¼ - ½ cup crumbled feta cheese
Optional: 2 Tbsp fresh dill, chopped, for serving
Directions
Prepare potatoes according to package directions. Remove from oven and allow to cool for a few minutes. Arrange in a single layer on a large serving plate.
If using refrigerated chicken, optionally warm it up. Top the potatoes with chicken.
Drizzle about ½ cup dressing over the chicken and potatoes. Top with a layer of tomatoes, followed by cucumber and pickled onions.
Sprinkle with feta cheese, then drizzle the remaining dressing over top. Optionally sprinkle with fresh dill. Serve and enjoy!
Recipe Note
This recipe is very flexible! Choose your favorite base. We love Jesse & Ben's fries made without seed oils. You can also use Roots Farm Fresh Potato Tots, Siete tortilla chips, or, if you aren't gluten-free, pita bread cut into triangles. And of course, you can always roast your own potatoes to use as the base.
