Doner kebabs are a wildly popular Turkish dish that has become a global favorite. Traditionally made with lamb, beef, or a combination, the meat is cooked on a vertical rotisserie before being thinly shaved and served in flatbread with vegetables and flavorful sauces. It's quintessential street food, but the usual cooking method doesn't really work at home—not unless you have a an upright rotating spit!

We took inspiration from doner kebabs to create this inside-out recipe that doesn't use any bread at all. Instead, the spiced beef is the bread. Rolled flat and cooked in the oven, the meat acts like flatbread to hold all the delicious vegetables. Creamy Primal Kitchen Tzatziki Style Dressing made with grass-fed yogurt and robust Mediterranean herbs tie the flavors together. The combination is simply irresistible.
