We’re turning the traditional doner kebab inside out in this Mediterranean-inspired dish featuring Primal Kitchen Tzatziki Style Dressing. Traditionally, doner kebabs are served in pita bread pockets, but in this version the meat is the wrap! Flattened spiced meat patties hold deliciously crispy vegetables topped with even more cool, creamy tzatziki for a complete meal you can eat with your hands.

Ingredients
1 lb ground beef
3 large eggs
1 tsp baking powder
1 Tbsp onion powder
1 Tbsp garlic powder
2 tsp ground cumin
2 tsp ground coriander
2 tsp smoked paprika
1½ tsp salt
1 tsp dried oregano
½ tsp ground black pepper

1-2 Tbsp Primal Kitchen Pure Avocado Oil
3 cups shredded iceberg lettuce
1 cup cherry tomatoes, halved
1 small cucumber, optionally peeled, diced
1 small red onion, halved and thinly sliced
½ cup crumbled feta cheese (optional)
Additional Primal Kitchen Tzatziki Style Dressing

4 sheets parchment paper, approx. 12 inches long

Directions
Preheat the oven to 375℉.
Add the meat, eggs, baking powder, and all the spices to a food processor. Pulse until completely incorporated into a smooth paste. Use a spatula to scrape into a bowl and divide into six equal portions and roll into balls.
Place a sheet of parchment paper on a flat surface and drizzle lightly with avocado oil (or spritz with avocado oil spray). Place two meat balls on the oiled paper about 6 inches apart and flatten into circles.
Lightly oil the tops and place a second sheet of parchment paper on top. Roll or press the meat until both discs are approximately ¼ inch thick. Remove the top sheet of paper and roll the bottom sheet with the meat still inside. (See the video for instructions.)
Repeat for the remaining four meat balls, then place all three parchment rolls on a lined baking sheet in place in the oven. Bake for 25 minutes.
Remove from the oven and let sit for a few minutes to cool slightly. Carefully unwrap the meat. For crispier edges, place a heat-safe metal rack inside the baking sheet and put the meat without the parchment paper on the rack. Place under the broiler for a minute or two, watching carefully to make sure it doesn’t burn.
Load up each serving with lettuce, tomatoes, cucumber, and onion. Top with feta, then drizzle with additional tzatziki dressing. Fold up the sides of the meat like flatbread or a tortilla. Serve with more tzatziki dressing for dipping. Enjoy!

Doner kebabs are a wildly popular Turkish dish that has become a global favorite. Traditionally made with lamb, beef, or a combination, the meat is cooked on a vertical rotisserie before being thinly shaved and served in flatbread with vegetables and flavorful sauces. It's quintessential street food, but the usual cooking method doesn't really work at home—not unless you have a an upright rotating spit!
We took inspiration from doner kebabs to create this inside-out recipe that doesn't use any bread at all. Instead, the spiced beef is the bread. Rolled flat and cooked in the oven, the meat acts like flatbread to hold all the delicious vegetables.
