Ingredients
3 lbs small potatoes (fingerling, Yukon gold, or baby potatoes are all good), washed and quartered
1 lb bacon
2 Tbsp distilled white vinegar
¼ cup herbs (fresh parsley, dill, chives, or a combination), finely chopped
- 1 large shallot, diced
- 2 cups shredded sharp cheddar cheese
4 hard-boiled eggs, chopped

8 oz Primal Kitchen Buttermilk Ranch Dressing
- Salt and pepper to taste
Optional: 1 scallion, green part thinly sliced, for garnish
Directions
Place potatoes in a large saucepan and add just enough water to cover. Add a generous pinch of salt. Bring to boil over medium-high heat. Reduce heat and simmer until potatoes are just tender, around 6 to 8 minutes. Meanwhile, move on to the next step.
While the potatoes cook, cook the bacon until crispy. Set aside on a towel-lined plate to drain.
Drain potatoes in a colander and transfer to a large bowl. Add vinegar and a pinch of salt. Toss gently.
Set aside a tablespoon of the fresh herbs. Add the rest of the herbs to the potatoes along with the shallots, cheese, and eggs. Crumble the bacon and add about half to the potato mixture. Pour the Primal Kitchen Buttermilk Ranch Dressing over everything and toss gently to coat. Taste and adjust salt and pepper if desired.
Transfer to a serving bowl. Top with remaining bacon crumbles and herbs. Optionally sprinkle with scallion. Enjoy!
