Ingredients

6 Tbsp Primal Kitchen Hot Honey Mustard, plus more for serving

6 Tbsp Primal Kitchen Avocado Oil
2 cloves garlic, minced
1½ tsp kosher salt
½ tsp ground black pepper
2 Tbsp fresh lemon juice
4 small chicken breasts, cut into 1½-inch cubes
1 zucchini, sliced into ¼-inch rounds
1 red onion, quartered and separated into pieces
4 mini bell peppers, stemmed, seeded, and quartered
1 small lemon, sliced into ¼-inch rounds
8 skewers (if using wooden skewers, soak in water for 30 minutes before grilling)

Directions
In a large bowl, whisk together hot honey mustard, avocado oil, garlic, salt, pepper, and lemon juice. Set aside approximately 2 tablespoons of the marinade for vegetables, then add the cubed chicken to the remaining marinade in the bowl. Stir well to coat. Cover and place in the fridge for at least 30 minutes, up to overnight.
When you are getting ready to assemble the kabobs, place the vegetables in a small bowl and toss with the remaining marinade. Let sit for a few minutes.
Assemble by alternating pieces of chicken with zucchini, onion, pepper, and lemon slices on each skewer, dividing the ingredients equally across the 8 skewers.
Heat grill over medium heat to 400° F. Once hot, place the kabobs on grill and cook for 15 minutes, turning occasionally. Use a meat thermometer to check that the internal temperature of the chicken has reached 165° F. If needed, add more cooking time.
Transfer kabobs to a platter and let rest a few minutes. Serve with a ramekin of hot honey mustard for dipping. Enjoy!
