Mediterranean Farro and Chickpea Bowl with Tzatziki Chicken

This farro and chickpea bowl is a satisfying taste of the Mediterranean. Think Greek salad meets grain bowl. Primal Kitchen Tzatziki Style Dressing (made with grass-fed dairy!) does double duty as chicken marinade and finishing sauce.

Ingredients
1 lb boneless, skinless chicken thighs, cut into 1” cubes

1 bottle Primal Kitchen Tzatziki Style Dressing
- ¾ cup uncooked semi-pearled farro, rinsed
1 Tbsp salt, divided
½ cup canned chickpeas, drained and dried thoroughly

2 tsp Primal Kitchen Avocado Oil
½ tsp ground black pepper, divided
1 English cucumber, chopped
1 cup cherry tomatoes, halved
½ cup crumbled feta cheese
- ½ cup Kalamata olives, pitted and halved
2 cups packed arugula
2 Tbsp finely chopped herbs (dill, parsley, mint, or a combo)
Optional: Pickled red onions for serving
Directions
Place chicken and about 2/3 of the tzatziki dressing in a large resealable bag or container. Toss to coat the chicken, then place in the fridge to marinate for a minimum of 1 hour, preferably 4-8 hours for deeper flavor penetration.
About an hour before you want to eat, bring a pot of water to a boil. Add rinsed farro and 1½ tsp salt, and cook for 25-30 mins until tender.
Drain farro and spread onto a large plate or baking sheet to cool and dry for at least 20 minutes. This keeps the farro from overcooking and turning mushy. Meanwhile, move on to the next step.
Preheat the air fryer to 400℉. Making sure chickpeas are completely dried (this helps to get them perfectly crispy in the air fryer), toss them with the avocado oil. Place the chickpeas into the air fryer and cook for 12-15 minutes, shaking a couple of times to ensure even cooking. Remove and season immediately with ¼ tsp each salt and pepper. Set aside.
Remove the chicken from tzatziki marinade and season with remaining salt and pepper. (Discard the marinade.) Set the air fryer to 375℉. Add chicken and air fry for 9-10 minutes. Flip and continue to cook for an additional 7-8 minutes, until chicken thighs are cooked through.
Now construct your bowls. Start with the cooled farro. Add cucumbers, cherry tomatoes, kalamata olives, feta cheese, arugula, and chicken. Drizzle remaining tzatziki over top. Top with crispy chickpeas, pickled onion if desired, and fresh herbs. Enjoy!
