Cranberry Whipped Feta Dip

What’s not to love about cranberries? Bursting with sweet-tart flavor and brimming with holiday cheer, they bring festive flair to any dish. While these crimson beauties were in season, we couldn’t help whipping up a delicious recipe that makes a perfect party starter, holiday appetizer, or easy Christmas dip.
To contrast with the vibrant flavor of the berries, we added briny feta whipped with our creamy, dreamy Mayo. Made with simple ingredients like avocado oil and cage-free eggs, it's the perfect solution to smooth out the texture of the dip.
This holly jolly dish is completed with fresh thyme, homemade cranberry jam, and a drizzle of earthy Primal Kitchen Extra Virgin Olive Oil for a buttery finish. Once you have your dip plated to perfection, serve with a hearty helping of gluten-free Simple Mills crackers so everyone can dunk and enjoy!

The weather outside might be frightful, but this sweet and savory whipped feta dip is delightful! Filled with the dreamy flavor of cranberries and our original mayo made with avocado oil and cage-free eggs, this dip is sure to be a hit at family dinners and holiday parties.
Ingredients
- ¼ cup pistachios, chopped
- 2 sprigs fresh thyme, stems removed
- 1 clove garlic, minced
- 1 block feta cheese (6 ounces), cubed

1 cup Primal Kitchen Mayo
- 1 cup orange juice
- 1 cup whole cranberries
- 2 Tbsp. Honey, plus more for drizzling (optional)

Primal Kitchen Extra Virgin Olive Oil, for drizzling
Simple Mills crackers, for dipping
Directions
Chop pistachios. Pull leaves off of thyme sprigs. Dice garlic. Cut feta cheese into cubes.
Place feta, garlic, and thyme in a blender or food processor. Add mayo. Blend until smooth and creamy.
- In a small pot, bring orange juice to a boil. Pour the cranberries in. Add honey.
- Reduce heat to medium and let it simmer for about 8 minutes, stirring occasionally, until the cranberries begin to burst and the mixture looks like a thin jam.
- Spoon the feta mixture onto the center of a plate, making a circular mound. Top with cranberry jam. Sprinkle with chopped pistachios.
- Drizzle with Primal Kitchen Olive Oil and honey. Garnish with a sprig of fresh thyme.
- Serve with your favorite Simple Mills crackers for dipping. Dip, dunk, and enjoy!
