In this easy ranch chicken recipe, we combined our clucker with this dreamy dressing and cooked it up in an Instant Pot for a quick and easy main dish. While you can use two pounds of chicken breasts if you prefer, we love the extra juiciness and flavor that comes from mixing juicier dark meat Instant Pot chicken thighs with leaner breast meat.
Packed with flavor and free from cane sugar, corn syrup, and canola oil, this delicious dish is the perfect base to customize your perfect chicken dinner. Tuck diced ranch chicken into butter or Bibb lettuce cups with sliced grape tomatoes, avocado, and fresh cilantro for tortilla-free Instant Pot chicken tacos. Transform boring chicken thighs and bland breasts into a protein that’s perfect for weekly meal prep for the family. This quick and easy Instant Pot chicken ranch recipe is made with just a handful of simple ingredients, including our deliciously creamy and cool, no-dairy Ranch Dressing.
Ingredients
Directions
Spray the inside bottom of the Instant Pot with avocado oil spray.
Coat chicken pieces with taco seasoning, then place into the bottom of the Instant Pot. Pour in ranch dressing.
Seal lid and set to Poultry (if your pot doesn’t have a Poultry button, set to manual for 15 minutes).
When cycle is complete, allow pressure to release naturally.
Remove lid, take chicken out and slice, dice, shred, or leave whole.
Serve with extra ranch dressing, if desired.
