Vanilla Coconut Collagen Fuel Popsicles

 

Cool off from the July heat with these gorgeous patriotic berry popsicles made with fresh fruit and Primal Kitchen® Collagen Fuel!

ABOUT DEVRIE AND BRECKE

Devrie Pettit is a Registered Dietitian/Nutritionist. She received her BS degree in Nutrition and Food Science from Utah State University, and then went on to complete her Dietetic Internship and receive her Master’s Degree from Stony Brook University in New York.

Devrie studied the Mediterranean Diet in Italy, and is constantly researching the latest in the nutrition world. She is a certified Pilates instructor through Poise and Strength Pilates, and spent six years developing a corporate wellness program for the top insurance brokerage firm in Utah. Devrie is a member of the Academy of Nutrition and Dietetics as well as a member of the Sports, Cardiovascular, and Wellness Nutrition Practice Group. She does not adhere to a certain “diet”, rather focuses on whole food.

 

 

Brecke Ure is a certified personal trainer through NASM and a certified group fitness instructor through AFAA. Brecke began her career at Life Time fitness as a personal trainer, boot camp, and group weight loss instructor. Fitness is her passion, and she's consistently learning new techniques. She believes that a varied workout routine is the key to keeping weight off.

Brecke recently started working as a trainer at Orange Theory Fitness where she coaches and trains clients on weight loss and heart rate training, while also giving them a killer workout. She has run several half marathons, Ragnar relay races, and completed the Big Cottonwood Marathon in 2013!

Vanilla Coconut Collagen Fuel Popsicles 

 

INGREDIENTS

For the collagen swirl...

  • 1 can organic coconut milk
  • 2 scoops Primal Kitchen Foods Vanilla Coconut Collagen
  • 2 TBSP pure maple syrup

For the raspberry swirl....

  • 1 cup fresh raspberries
  • 1/2 lemon juiced
  • 1 TBSP pure maple syrup
  • 1 TBSP water

For the blueberry swirl...

  • 1 cup fresh blueberries
  • 1/2 lemon juiced
  • 1 TBSP pure maple syrup
  • 1 TBSP water

 

INSTRUCTIONS

  • Whisk together the coconut milk, maple syrup, and Primal Kitchen® Coconut Vanilla Collagen Fuel in a large bowl. Set aside.
  • Blend together the raspberries, lemon, maple syrup, and water. Pour the raspberry mix into a separate bowl, and set aside.
  • Next, blend together the blueberries, lemon, maple syrup, and water. Pour the ingredients into a separate bowl, and set aside.
  • Grab your popsicle mold, and create a layer of first the blueberry mixture, then collagen mixture, and  finally the raspberry mixture.
  • Freeze the mold overnight.
  • Enjoy!
