2 Heads of Cauliflower
1 cup of water

1 Tbsp of Primal Kitchen Avocado Oil
-
⅓ cup of Primal Kitchen Vegan Rosemary Garlic Mayo
-
Primal Kitchen No-Dairy Vegan Mushroom Gravy
Salt to taste
Directions
Break down 2 heads of cauliflower into florets.
Place them into a steamer bucket with 1 cup of water into the instant pot. Pressure cook on high for 5 minutes. Hit the quick release.
You can also steam your cauliflower on the stove in a boiling pot until soft.
Remove the cauliflower and add to a food processor with Mayo, salt to taste, and avocado oil.
Pulse to combine until the consistency is fluffy and smooth.
Heat the gravy in a saucepan over medium until hot, and top the mash. Enjoy!

We used vegan mayo to make our cauliflower mash velvety smooth and creamy. You can also use regular mayo to add a little extra heft if you’re okay with eating eggs. A bit of flour will also do the trick to add extra thickness to mashed cauliflower.
Can You Freeze Cauliflower Mash?
Enjoy this mash long after the holidays are over by freezing it in an airtight container for up to 3 months. Just make sure to just freeze mash without any toppings like gravy or garnishes. Fresh is better when it comes to veg though, so for peak flavor, enjoy this mash hot!
How to Reheat Mashed Cauliflower:
The best part of a holiday feast is enjoying the leftovers! For the best consistency and flavor, add just a little bit of your preferred milk to the remaining mash in a baking dish and combine. Cover the dish in foil and toss it in the oven at 350 for 20-30 minutes, or until hot.
