They’re the quintessential easy snack food, melding the saltiness of tortilla chips with gooey cheese and an assortment of flavor-packed toppings that come together in a glorious stack of crispy, chewy goodness. Add some cooked rotisserie chicken for extra protein and you go from a side snack to a full meal in minutes.
Our leveled-up take on shredded chicken nachos is more bougie than ballpark. For those who don’t do daily or just want to put more plant-based foods on their plate, we swapped the cheese for our zesty Queso Style Plant-Based Dip made with premium ingredients like organic diced tomatoes, nutritional yeast, and jalapeño peppers. Together with a combination of aromatic spices and fresh jalapeño slices, it gives this chicken nachos recipe just the right amount of kick without searing your taste buds.

Our no-dairy twist on shredded chicken nachos combines store-bought rotisserie chicken with Queso Style Plant-Based Dip for an upscale dish that’s perfect for game day or a mid-week snack. Pure avocado oil and spices you probably already have in your cabinet round out the ingredients, making this snack super simple to assemble in minutes. Just mix, microwave, and serve!
Ingredients
- 4 cups pre-cooked rotisserie chicken, shredded
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1 lime, juiced

2 tablespoons Primal Kitchen Avocado Oil
- 8 cups tortilla chips

1 cup Primal Kitchen No-Dairy Queso-Style Plant-Based Dip, plus more for topping
- 1 large tomato, diced
- 2 jalapenos, sliced
- 1 cup guacamole

Directions
Combine the shredded chicken, chili powder, cumin, garlic powder, onion powder, salt, lime juice, and avocado oil in a bowl. Toss everything together until the chicken is evenly coated with the seasonings.
- Arrange a layer of about 2 cups tortilla chips on a microwave-safe plate or dish.
- Spread 1 cup ( about 4 ounces) seasoned chicken evenly over the tortilla chips.
- Drizzle 1/4 cup queso over the chicken and tortilla chips.
- Place the plate in the microwave and heat for about 60 seconds, or until warmed through.
- Repeat until you have 4 servings.
- Evenly top each plate of nachos with diced tomatoes, sliced jalapenos, dollops of guacamole, and more queso on top if desired.
