Easy Egg Salad Sandwhich
Serve with a side of roasted veggies or a crispy slaw for a mix of flavor and texture.
- Place eggs in a medium saucepan or pot.
- Add enough water to cover the eggs with 1 inch of water. Bring the water to a boil.
- Remove from heat and cover. Let the eggs stand for 15 minutes.
- Use a slotted spoon to transfer eggs to a bowl of ice water. Let the eggs stand for about 5 minutes.
- Peel the eggs and shred with a rotary grater. Place the eggs in a medium bowl.
- Add remaining ingredients and mix well.
- Place onto gluten-free brioche bread.
- Optional: Medium boil an egg, peel, and place it in the center of your sandwich.
