Chicken Cobb Salad with Buffalo Ranch

The classic Cobb salad boasts a perfect balance of tastes and textures, which is why it's a crowd favorite. Made with a blend of proteins and produce accented with sharp, pungent blue cheese crumbles and a cool, creamy dressing, it's a delicious and easy-to-make meal.
If you like your food saucy and a little spicy, you’ll love the bold, fiery dressing of this Chicken Cobb Salad. To make it, we combined our cayenne-spiced Original Buffalo Sauce with velvety Ranch Dressing to provide the flavor of a deconstructed pub wing in a salad. You'll get all the classic taste of crisp Buffalo chicken wings with creamy blue cheese dressing in a produce-packed bowl—no messy deep-fried skin or bones to remove.
What is a Cobb Salad?
The classic Cobb salad is made with chicken breast (often fried), hardboiled eggs, tomato, bacon, green onion or chives, blue cheese, and avocado—all served atop a bed of mixed greens and paired with a vinaigrette or creamy dressing. Cobb salad can sometimes be confused with chef salad because they both contain lettuce, meat(s), cheese, and eggs, but the latter is typically made with deli turkey and ham, plus strips of cheddar or Swiss cheese.
Our protein-heavy Chicken Cobb Salad features crisp romaine, snappy celery, a bit of buttery avocado, half a handful of cherry tomatoes, and plenty of protein from the skillet-cooked chicken thigh and sliced hardboiled egg. A handful of blue cheese crumbles adds enough salty bite that we didn’t need to add bacon, but feel free to customize it with turkey bacon or your favorite salty cured meat.
For the dressing, we combined our feisty, medium-heat Original Buffalo Sauce with velvety Ranch to tame the cayenne pepper sauce bite. If you prefer to start with a ready-made dressing, our Buffalo Ranch and Dreamy Italian dressings pair equally well with this salad. You can also mix up a simple, keto-friendly homemade dressing with your favorite oil whisked with apple cider vinegar or white wine vinegar and a teaspoon of chopped fresh herbs.

1 tsp. Primal Kitchen Avocado Oil
1 boneless, skinless chicken thigh
¼ tsp. salt
⅛ tsp. black pepper
⅛ tsp. paprika
4 cups romaine lettuce
5 cherry tomatoes, sliced
1 hardboiled egg, sliced
¼ avocado, diced
1 Tbsp. blue cheese crumbles
1 celery stalk, chopped

2 Tbsp. Primal Kitchen Ranch Dressing

2 Tbsp. Primal Kitchen Original Buffalo Sauce
Directions
Pour avocado oil in a cast iron skillet over medium-high heat. When the oil is hot, add the seasoned chicken thigh.
Cook chicken thigh for about 10 minutes per side. Remove the cooked chicken thigh from the skillet and rest for 5 minutes on a cutting board.
When the chicken is cooled, slice into bite-sized pieces and set aside.
Wash, dry, and chop the romaine lettuce. Place the lettuce at the bottom of a large bowl.
Add tomatoes, hardboiled egg, avocado, blue cheese crumbles, and celery on top of the lettuce. Add cooked, sliced chicken. Drizzle with Ranch Dressing and Buffalo Sauce.

How to Cook Chicken for a Cobb Salad
We bronzed a chicken thigh in a cast iron skillet on the stove before slicing and adding it to our Cobb salad recipe, but you could also bake, grill, or poach chicken breasts—or even use shredded chicken or rotisserie chicken.
