Keto Bone Broth

Bone broth is a staple of the keto diet and the Primal lifestyle. It's easy to make, minimizes food waste, and contains many vitamins and nutrients, including calcium, vitamin A, and iron. While beef broth is a go-to, chicken broth provides similar benefits and has a delicious flavor that's perfect as a base for heartier soups and stews. Made with apple cider vinegar and veggies, our keto bone broth is a great ingredient to keep on hand for flavoring meals.
This 2-part recipe includes instructions for making a batch of chicken bone broth, plus additional details on transforming your bone broth into a delicious, drinkable soup perfect for curbing your midday cravings. Serve it hot in a mug and sip it throughout your day.

Whip up this easy bone broth using leftovers from your chicken dinner!
Ingredients
4 to 5 pounds chicken parts/bones
1 onion, chopped
2 carrots, chopped
2 ribs celery, chopped
2 cloves garlic, peeled and chopped
6 sprigs parsley
1 Tablespoon apple cider vinegar
1 teaspoon Himalayan salt
4 quarts water
2 quarts chicken bone broth
12 stems fresh dill
12 stems fresh parsley
6 sprigs fresh thyme
2 sprigs fresh rosemary or sage

8 Tablespoons Primal Kitchen Avocado Oil
8 Tablespoons ghee

For the broth:
Combine all the ingredients in your Instant Pot. Note: You do not need to cut up your chicken. You can put it in whole.
Cover with enough cold water to fill 2/3 of the way.
Cook on "Soup" setting for 120 minutes.
Strain solids from the stock. Let the ingredients cool completely, and then refrigerate (keeps for 3 to 5 days) or freeze (up to 3 months).
For the soup:
Tie the herbs together using kitchen twine.
Bring the stock to a boil and toss the bundle of herbs in.
Reduce heat to a simmer. Cover and cook 25 minutes.
Put one cup of the herbed bone broth into a blender.
Add one Tablespoon of avocado oil and one Tablespoon of ghee.
Blend until frothy and pour into a mug. Add salt, to taste, and enjoy!
