Dreamy Pesto Kelp Noodles

If you're looking for a gluten-free, low-carb alternative to pasta, look no further than kelp noodles! Made from the inner core of brown-green kelp, this clear pasta cooks up similarly to glass noodles. On their own, there's not much flavor. But put them together with a delicious pesto sauce made with Primal Kitchen® Dreamy Italian Dressing and you have a rich, satisfying cold noodle salad infused with Mediterranean flavor.
A perfect summer dish, Dreamy Pesto Kelp Noodles are quick and easy to make. You'll need to soak the noodles overnight before whipping up this dish (we used the Sea Tangle brand), but otherwise, it comes together in just minutes. Top your kelp noodle salad with pine nuts, sweet baby tomatoes, and cracked black pepper for a chef-quality meal packed with flavor and nutrients.

This delicious cold noodle salad is made with gluten-free, carb-free kelp noodles tossed in a rich, creamy pesto sauce made with Primal Kitchen Avocado Oil and Dreamy Italian Dressing.
Ingredients

1/4 cup Primal Kitchen Dreamy Italian Dressing
-
1/4 cup Primal Kitchen Avocado Oil
1 large avocado
1/4 cup pine nuts
2 cups basil, loosely packed
Himalayan salt, to taste
8-10 cherry tomatoes
Ground black pepper, to taste
1 pkg kelp noodles
Directions
Place the kelp noodles in a covered bowl of water and soak them overnight in the refrigerator.
The next day, add the Dreamy Italian Dressing, Avocado Oil, avocado, pine nuts, basil, Himalayan salt, and cherry tomatoes to a food processor. Blend until smooth.
Mix the pesto in with the kelp noodles. Sprinkle pine nuts and baby tomato slices on top. Add a pinch of black pepper and enjoy!
Recipe Note
Don't have kelp noodles on hand? This pesto is equally delicious on glass noodles, rice noodles, or gluten-free angel hair pasta.
